Master Brewer

Job Description:

The Master Brewer is responsible for leading the brewing team to produce top quality and consistent beer in the safest and most efficient manner possible.  The position is responsible for moving brands forward from inception, through development, and into final production. They will coordinate with Brewery Operations team on the creation and execution of beer concepts, ideas, and recipes.

They will be responsible for all aspects of brewing such as ingredient purchasing, planning and execution of brewing functions, leading process improvement efforts, and ensuring safe and sanitary working conditions, as well as long term capital investments and maintenance plans.  The Master Brewer is also a hands-on member of the Brewery Operations team, meaning that they may be expected at times to be competent in executing wort production, active fermentations, dry hopping, conditioning beer, lab monitoring and packaging tasks when necessary.
 

Job Requirements:

Key Duties & Responsibilities

  • Lead new product development with recipe formulation and innovative techniques to create new and exciting flavor experiences while coordinating with the management team to adhere to TTB labelling guidelines and product launch time frames
  • Coordinate purchasing and inspection of raw material ingredients; ensure inventory is on hand for brew days and recipe/brewing transaction are recorded in ERP system
  • Identify improvement opportunities in recipes, processes, and quality
  • Ability to execute and develop a long-term product portfolio plan that is evolving from craft beer into liquor/spirits, RTDs, water, coffee, and other consumer product categories
  • Author new and edit existing SOPs and implement systems to ensure brewers are performing in compliance with processes
  • Organize and unite the team with constant communication on performance and focused objectives and goals inside the brewery
  • Manage and plan brew schedule, regularly communicate schedule to taproom, marketing, and sales departments
  • Capable of performing all brew house, cellar, CIP, QC, and Packaging duties
  • Recruit, train, motivate, educate, lead, schedule and manage brew-house staff
  • Lead by example and set a Safety-First culture by always wearing PPE, following GMP and Safety Protocols
  • Ensure the facility is regularly cleaned and always in a presentable condition.  Maintain brewing areas to ensure compliance with company quality, sanitation, and safety standards
  • Understands and adheres to all FDA, TTB, OSHA standards
  • Expert knowledge of ingredients (grain, hops, yeast, water profiles, etc.), their characteristics, and how they perform under various conditions and modern applications
  • With procurement team be a point of contact for our brewery material suppliers, and mediate any quality and supply issues
  • Track and analyze performance daily to identify gaps and opportunities to continuously improve the quality, consistency, and cost of our products
  • Comfortable analyzing data, coming up with a long-term plan and executing on that budget and as well defining budget improvements or improvements over budget
  • Ability to work with Brewery Operations team to ensure that Operations remains in line with overall 1 year, vs long-term plans
  • Has the experience of leading a growing craft beverage business and the capital investment plan required to add on new product categories, while ensuring compliance to safety and quality standards

Minimum Requirements

  • Bachelor’s Degree in a related technical field required (Science or Engineering preferred) and/or a formal brewing education from an accredited brewing program (Siebel, UC Davis) or professional brewing experience
  • 10+ years of experience in the craft beverage industry (10+ barrel brew house, barrel aging, sour production, pilot brewing, keg/can/bottle packaging, brewery installation a plus)
  • Works with QA to ensure that our products are in line with our consumer expectations and our benchmarks
  • Can identify preventative maintenance, from brewhouse to canning line to warehouse
  • Planning and scheduling of workforce and production to meet packaging, shipping, and new product launch objectives
  • Experience in successfully creating beverage recipes
  • Budgeting and ability to set priorities for team to work within well-defined financial targets and guidelines
  • Must be able to evaluate, develop and execute training plans for Brewing/Cellar staff
  • Knowledge of brewing and packaging equipment as well as steam, chilled water, and compressed gas utilities
  • Strong computer skills with the ability to work easily in Excel, ideally experience with Netsuite, SAP (Obeer) or other ERP systems

Other Requirements

  • Ability to repeatedly lift up to 55 lbs.+; ability to work in a cold, noisy, wet, slippery environment and to climb ladders
  • Frequently stand for the duration of the shift, walk, bend over, twist, kneel, climb, stoop and crouch
  • This position requires proper handling of hazardous materials and operation of complex moving machinery
  • Regularly exposed to a damp, wet environment with hot liquids, airborne particles, chemicals, and moving machinery
  • Must be able to travel via car, airplane or train

Reporting structure

  • Reports directly to the CEO
  • As a member of the Management Team, works closely with all other members
  • Oversees and manages the Brewery Operations team 
  • Will work directly with the VP of Sales and the VP of Marketing to develop long-term cohesive product plans
  • Works with key vendors to manage long-term plans and execution
