Godspeed Brewery is a mid-sized Brewpub operation located at 242 Coxwell Ave. in Toronto's Upper Beaches district. The facility opened on July 1st 2017. The location includes a production brewery, a retail store, and a small open kitchen with a seating capacity of 140 seats and 29 seats covered patio. The Owner/Brew Master has 15 years of experience in the field. He has brewed and designed beers for a World Class brewery, established a production brewery in Japan and collaborated with some of the best breweries in the world. Godspeed Brewery is looking for a Permanent Head Brewer for its Brewpub who will stand by the Brew Master making sure that all beer production protocols and operations are met.
 
Godspeed Brewery is seeking a Head Brewer with the following experience and qualities:
 
  • 5 years’ experience as a Head Brewer position in an established brewery
  • Diploma in Microbiology, Biochemistry or Biotechnology
  • Basic electro mechanical and machinery repair skills & maintenance knowledge
(Temperature controller’s adjustments and replacement, pump seals and packaging line Seamers adjustments and replacement, etc.)
  • In-depth understanding of Japanese Brewery methods
 
Duties includes:
 
Tracking of:
 
  • Water filtration filters and cartridges
  • Water UV instrumentation
  • Water mineral contents
  • Water mineral variations throughout the year
  • Water treatment for CIP and Brewing
  • Machinery maintenance schedules
  • Physical qualities & yields variations of grains and hops
  • Different lots variables of all raw materials & Recipe modifications
  • Age, rotation & inventory of all raw materials
  • Storage environment/quality of all raw materials
  • All raw materials ordering
  • Bottle re-fermentation & Barrel aged beers evolution
 
Laboratory work:
 
  • Working in a 100% sterile environment
  • Autoclave manipulations
  • Agar slants inoculations
  • Yeast bank storage environment & inventory
  • Cross microbial contamination control
  • Yeast and microbes isolation
  • HLP and/or ADN microbial testing
  • Propagation of healthy yeast cells from agar slants to fermenter
  • Yeast counts at pitch & throughout fermentation stages
  • Yeast cropping & generations management
  • Yeast optimal vitality & viability control
  • Optimal Oxygen ppm targets for different yeast strains
 
Other Brewing Operations and Quality Control duties:
 
  • A to Z sensitiveness & follow ups (constant visual, smelling and tasting of pretty much everything from raw grains to hops, to yeast, to wort, to fermenting green beer, to beer at crashing and maturation stages, to beer transfers, to non-carbonated and carbonated prepackaged beer, to post packaged beer, to evolution of beer all the way to the beer glass) to assure quality & consistency.
  • State of the art wort production & intensive data records
  • Impeccable CIP procedures
  • Multiple titrations (water, CIP chemicals)
  • Sensitiveness to beer oxygen pickups from wort production to cellaring to packaging
  • All packaging procedures
  • Bottle re fermentation procedures
  • Beer storage environment, shelf life & rotation management
  • Protocols writing & adjustments
  • Educating the FOH and other Brewpub staff about beer
  • Be part of beer sensory panels and discussions
  • Be part of designing recipes with the Brew Master
  • Requisition materials and supplies
  • Train staff in job duties, safety procedures and company policy
  • Recommend personnel actions such as hiring and promotions
  • Prepare production and other reports.
  • Travelling to beer events and conferences
